Thomas Keller's Bouchon Bistro Makes Summer Changes

Thomas Keller’s Bouchon Bistro is embarking on quite a few changes for the summer up and down the California coast. First, we have the addition of a movie night in the central courtyard separating the brasserie from The Montage Hotel in Beverly Hills. The Sunday night movie night schedule ranges from Casablanca to Clueless. The LA eatery is also serving the famous Ad Hoc family style fried chicken from one of Keller’s most popular Yountville locations on select nights in August, along with Sunday night suppers including warm weather favorites such as baby back ribs. Hot tip: you can also call ahead and order these meals to go and have your own picnic at home.

Chef de Cuisine Chef Rory Herrmann is overseeing the SoCal location of the bistro and has added several new light dishes to the menu for the warmer months including a melon salad, Scottish salmon tartare with hard boiled hen eggs, crème fraiche; and  a herb roasted fillet of halibut. Not to worry, diehard fans can still order steak frites and the best croque madam in town from the menu.

We love the wine selection in the bistro, particularity a Whispering Angel rose from Provence, but at this time of year we need to think more about quality of our water. Thomas Keller was an early component of changing the water program in all his eateries from Bouchon to The French Laundry and PerSe. NordaqFRESH from Sweden is one of the most environmentally premium waters and seems to be a buzz word now at many top tables. We were skeptical at first but after pairing the Nordaq agua against several other popular brands of bottled water, it was clear that the Swedish brand was the best choice for not interfering with the meal whether it was a simple green asparagus or a more complex beef dish followed by a rich chocolate dessert. This water actually enhances the natural flavor profile of your palate even with wine pairings. With over 130 Michelin Guide starred restaurants and luxury hotel groups across the globe already stocking the brand, this water is also currently being served at Noma, The Fat Duck, Eleven Madison Park, Le Bernadin and Daniel and other world renown eateries.
